For some reason, potatoes in your kitchen or pantry often end up being unused until they start to become plants. But the humble potato is so versatile that it can be used to create simple, tasty dishes that will satiate.
All you need are a few extra ingredients, and a bit of time and creativity.
Try this recipe for stewed chicken with potato and fermented tofu for a warm, homey dish that’s perfect with steamed rice and a condiment of cili padi and soy sauce.
Ingredients
2 quarter chicken (drumstick and thigh), cut into pieces
2 tablespoons fermented tofu
5-8 bulbs garlic, crushed
1 potato, sliced thinly
1 tablespoon cooking oil
Method
Heat the oil in a claypot and sear the chicken pieces until all sides are brown.
Add the fermented tofu and stir.
Add the potato, cover all ingredients with water, and simmer on low heat for 30 minutes, stirring every now and then.
Season with salt and pepper to taste. Note, however, that the fermented tofu will provide plenty of flavour.
Serve hot and enjoy.
